Juan Velasco is the proud owner of Finca La Mandarina near Chirinos in the San Ignacio Province in Cajamarca, Peru. The farm is located in a forested, mountainous region with rich, fertile clay soil. Though comparatively small in size, measuring in at only 1 hectare, Juan’s land brims with nearly 5,000 coffee trees. During harvest, pickers hand-select only the ripest cherries, which are then depulped within a day and dried on raised beds for 20-30 days. By employing meticulous extended fermentation techniques, Juan is able to enhance fruity flavor notes all while maintaining exceptional cup quality. In the coming years, Juan’s goal is to continue innovating in the quality and post-harvest processing of his coffee allowing him to invest more in production methods as well as his children's educations.
