Elías Roa is a longtime coffee producer, originally from Acevedo, Huila. He still maintains a few coffee farms there but Tamaná in El Pital has become the crown jewel. It's there he has honed his craft with more precise processing and better drying. He now cultivates a wide range of varieties including some older stock heirlooms and even some African varieties. His immediate family are mostly involved in coffee in some way. Bellanid, his wife, is the greatest of hostesses. His daughter, Derlin, and son-in-law, Diego Campos (former barista champion of Colombia) help manage the farm as well as their own plot in La Plata.

This single varietal microlot, comprised of 100% Papayo is rare outside of Huila and little is known about how it arrived in Colombia. It was originally thought to be a Caturra mutation, but genetic testing by World Coffee Research indicates a close relationship with Ethiopian Landraces. Papayo cherries are distinctive, with an elongated shape and are so named for their fragrance and similar appearance to papaya.

This elegant and complex offering is cherished by our roaster and offers smooth creme brulee body, honeysuckle sweetness and zesty kaffir lime acidity. This coffee shines on pourover!
