Our current Colombian E.A. (ethyl acetate) Decaf comes from regional farmers in Caldas and has been cupped from green coffee samples by our Importing partners at Cafe Imports and specifically chosen by them for decaffeination.  This coffee was soaked in a bath of water and a solvent called ethyl acetate, which is naturally derived from fermented sugar, often times from sugar cane. The solvent bonds to the salts of chlorogenic acid within the coffee, which allows for the extraction of caffeine. The coffee was then removed from its water bath and steamed at low pressure to ensure no traces of E.A. are left, and the finished product is almost entirely free of caffeine (0.1–0.3%).  We mostly brew this coffee as espresso on our Linea PB although brewing it in a coffee maker is great too! We like using the Bonavita 8 Cup Brewer at home or in the office, and use 2.5oz for a full, 40oz pot.
